I wanted to make a side dish with spinach other than boiled spinach.

Spinach with Soft-Cooked Eggs

Ingredients

2 servings
  1. 1 bunchSpinach
  2. 2Eggs
  3. For the sauce:
  4. 1/2 tbsp●Oyster sauce
  5. 1/2 tbsp●Soy sauce
  6. 1 tsp●Sesame oil

Cooking Instructions

    Boil the spinach, cut into bite-size lengths, and drain the excess water. Transfer to a plate. You could stir-fry with salt and pepper (not listed; a small amount).

    Make scrambled eggs in a frying pan, and lay it on the top of the spinach from Step 1.

    Combine the sauce ingredients, pour it on top, then you're done!

    I stir-fried bean sprouts and eggs, and put it on top. It has nice crispy texture and is delicious.

    I copied "Suirin's" recipe and cooked with komatsuna (Japanese mustard spinach). (It almost looks the same as the one with spinach.) I stir-fried komatsuna in oil, removed it from the pan, and scrambled the eggs in the same pan.

    I stir-fried bamboo shoots with spinach.
