Keep the necessary items handy.

Take a large bowl; add rice, fenugreek seeds, urud, chana, soak in 10 cups of water for 4 hours or overnight.
Transfer the soak ingredients to a grinder or blender. Make a smooth batter. Add Jowar flour whisk, make sure there are ar no lumps. Add water if necessary. Batter should be of flowing consistency. Leave the batter to ferment overnight. if you want to make dosai on the same day add yeast to the batter, keep in warm place; batter will ferment in 4-5 hours

To make dosa: I make dosa using cast Iron skillet, grease the skillet over medium high flame. Salt to taste. Add 1 tbsp sugar to the batter; it would give a nice color to the dosa. Laddle out 1 cup of batter on the skillet, with a circular motion, make thin dosa, reduce the flame a little. Cover and cook. Spray 1tsp oil on the top of the dosa. After a minue flip to cook the other side. Roast the dosa without covering the skillet. In a couple of minutes crispy dosa will be ready

Transfer the roasted dosais to a serving plate. Ser ve with chutni, chilli powder or sambar. I served with peanut coconut chutni
