Ingredients

An hour and a half
4 people
  • Whole chicken, 6 pounds, cut in 4 pieces: 2 leg quarters, 2 breast quarters
  • 4 stripscured bacon, chopped in bite size pieces
    California Farm Dry Cured Bacon
  • 8shiitake mushrooms,sliced
  • 4shallots, cut in rings
  • 4garlic cloves, crushed
  • 4 Tbsbrandy
  • 2 Tbsflour
  • 1 Tspcorn starch
  • 2strong california bay leaves
  • 1bouquet garni, fresh or dried
    California Farm Bouquet Garni Herbs
  • 1/2 cupwhite cooking wine
    California Farm Made Pinot Grigio Cooking Wine
  • 1/2 cupchicken broth
  • Tspcracked mild peppercorns
  • Tspsea salt if desired, (cured bacon has salt already)
  • Equipment: large cast iron dutch oven with lid
  • Cost: whole chicken $6, brandy & wine $1, other $3, per dinner $2.50

Steps

An hour and a half
  1. 1

    In cast iron dutch oven with lid, melt butter, quarter the whole chicken, brown chicken quarters on skin side only, 10 minutes.

    Put browned chicken in pan on bed of chopped bacon, sliced mushrooms, sliced shallots, crushed garlic cloves, and laurel leaves, pour brandy over, bring to boil, light with match, watch till flames are out, 5 minutes. Hold lid of dutch oven ready in case you have a flare up flame to douse.

    When brandy has burned off, add fresh or dried bouquet garni (see recipe), add chicken broth, wine, bring to boil, then simmer an hour with the lid on.

    When fork tender, place chicken on a warm serving platter in warm oven. Boil down chicken sauce till thick, about 10 more minutes, dissolve 2 Tbs flour and Tsp of corn starch in 3 Tbs cold water, add to sauce to thicken, taste and add cracked peppercorns and/ or sea salt, drizzle over chicken on platter, serve.
