There’s many names for this dish in different countries of West Africa and it’s my absolute favorite! I’m still perfecting this recipe, my mom made it the best 😊

Steps
- 1
Cut and blend all the vegetables with water to create a smooth paste.
- 2
Wash and drain cassava leaves. Add 4 cups of water to a pot and boil cassava leaves for 15 minutes.
- 3
Add vegetable paste and boil uncovered for an additional 25 minutes. Stir every so often so it doesn’t burn at the bottom. Add more water if needed. The more water you add the longer you should boil.
- 4
Once most of the water has evaporated, Drain sardine cans and add to the pot. Also add Maggie cubes, salt, and palm oil at this point.
- 5
Add 2 more cups of water and boil for 10 minutes. Then add peanut butter or ground peanuts. Boil until most of the water has evaporated.
- 6
Continue stirring and boiling until the leaves become soft. Taste test as you go and add salt to taste. Once you reach your desired consistency, it’s done!
