Ingredients

  1. 250 gramchopped Bhindi (Okra / Ladyfinger)
  2. 3 tbspoil + 2 tbsp oil
  3. 1/2 tspcumin seeds
  4. 1/4 tspasafoetida
  5. 1no medium size finely chopped onion
  6. 2no medium size tomato + 2 no green chilli + 1inch ginger piece +7 no garlic cloves paste
  7. 1 tspred chilli powder
  8. 1 tspcoriander cumin powder
  9. 1/2 tspturmeric powder
  10. 4 tbspsmoothing curd
  11. Salt as per taste
  12. 1/2 cupwater
  13. 1 tspgaram masala
  14. 1 tspkasuri methi
  15. 2 tbspfinely chopped green coriander leaves

Cooking Instructions

    First of all, wash and clean the okra properly. After that, wash it with a cloth and dry it completely and cut the stem from both sides with a knife and cut it in the middle and cut it into two pieces. And in a mixer jar add chopped tomato, garlic cloves, green chillies and ginger piece and crush them to make a puree.

    Now heat 3 tbsp of oil in a pan, add okra to it and fry on medium flame for 5 to 7 minutes stirring continuously with a spoon. After roasting for seven minutes, take out the okra in another pot.

    Now heat another 2 tbsp oil in the same pan, add cumin seeds and asafoetida and fry it, then add chopped onion and mix well. Now add tomato puree to this and mix and saute for 1 to 2 minutes.

    When the oil separates from the tomato gravy, add turmeric powder, red chilli powder and coriander cumin powder to it, mix well and saute these spices on low flame till the oil separates. After that turn off the gas and leave it for two minutes. After that, add smoothing the curd to it and mix it well and now turn on the gas again and keep stirring.

    Then add salt to this and mix well. Now when the oil separates from the gravy, add half a cup of water to it, mix and boil.

    After that, add the roasted okra to it, mix, cover the lid and cook for 6 to 7 minutes. Now, when the okra is fully cooked, add garam masala, kasoori methi and chopped green coriander leaves to it, mix and cook for two minutes and turn off the gas flame.

    Now our delicious Dahi Bhindi Masala is ready to serve. Serve this vegetable with roti, bhakhri or rice.
