Lasaniya / Garlic Sandwich Dhokla

Garlic Sandwich Dhokla is a popular Gujarati snack. Light, fluffy and flavoured with garlic chutney, this is a scrumptious treat. There are so many types and versions of dhoklas and a perfect teatime or breakfast recipe. Dhokla can be prepared with semolina with different textures and flavours. The one thing in common in all the variations is that they are light, fluffy and simply irresistible. Dhokla is one of the favourite snacks of my family, so I often make different versions at home.

There are so many types and versions of dhoklas and a perfect teatime or breakfast recipe. Dhokla can be prepared with semolina with different textures and flavours. First of all in a bowl add rava (semolina), curd and water and mix with a hand whisk. Let the batter rest for 10 minutes. Then add sugar, salt and water as needed to this batter and beat it well. After that add oil and mix the batter with a hand whisker

Now take the same batter in two bowls. Divide it into two equal parts and take some batter in the second part. Then grease a deep plate with oil. And put the water in a steamer to heat for a while.

Now add 1/2 tsp of Eno fruit salt and 1 tsp of water in a bowl and mix the batter properly. Now add this mixer to the greased plate and tap it and put it in heated water and let it cook for 6 minutes on high flame.

Now add in masher garlic bud, salt and sugar to a smooth paste and add in a bowl, add Kashmiri red chilli powder and spicy red chilli powder and grind it and prepare the paste. Then add 1 spoon of water and make the chutney. Now keep a little batter in the bowl, add and mix this chutney and add 1/4 eno fruit salt and 1 spoon of water and beat the mixer.

Now spread the garlic chutney over the prepared dhokla and let it cook on high flame for 5 minutes.

Now add 1/2 tsp of Eno fruit salt and 1 tsp of water in a second bowl and spread the third layer of Garlic Chutney on the layer and make it smooth. After that sprinkle black pepper powder on it and let it cook for 7 minutes. Then cool the dhokla and cut into squares with a knife.

Now for the Tempering, add oil, mustard seeds, cumin seeds and sesame seeds in a pan, add sweet curry leaves and spread it hot on all the dhokla. Garnish with green coriander on top.

Now this garlic sandwich dhokla is ready to eat. Serve this dhokla with hot tea or coffee.
