Black Bean Salad with Corn and Roasted Peppers

(290 grams) cooked black beans; 1 ear corn, cooked and grilled; 1 roasted green bell pepper, diced; 1 roasted yellow or red bell pepper, diced; 8 small pear-shaped tomatoes, sliced into rounds; 2 cloves garlic, grilled and chopped; 1/2 tablespoon chopped cilantro; 1/2 cup sliced green onions; 2 tablespoons olive oil; 1 1/2 tablespoons red wine vinegar; 1/4 teaspoon finely chopped jalapeño pepper; Salt to taste

I charred the skins of the peppers for the salad over a stovetop burner, then peeled them. If you want to skip this step, you can sauté the peppers in a skillet and let them cool.

10 oz. (290 grams)cooked black beans
1 earcorn, cooked and grilled
1roasted green bell pepper, diced
1roasted yellow or red bell pepper, diced
8small pear-shaped tomatoes, sliced into rounds
2 clovesgarlic, grilled and chopped
1/2 tablespoonchopped cilantro
1/2 cupsliced green onions
dressing
2 tablespoonsolive oil
1 1/2 tablespoonsred wine vinegar
1/4 teaspoonfinely chopped jalapeño pepper

Grill the corn, garlic, and peppers. Peel the roasted peppers and dice them.

In a large bowl, whisk together the olive oil, vinegar, jalapeño, and salt.

Add the remaining ingredients and mix well. Refrigerate until ready to serve.
