Serves 4 servings
  1. 10 oz. (290 grams)cooked black beans
  2. 1 earcorn, cooked and grilled
  3. 1roasted green bell pepper, diced
  4. 1roasted yellow or red bell pepper, diced
  5. 8small pear-shaped tomatoes, sliced into rounds
  6. 2 clovesgarlic, grilled and chopped
  7. 1/2 tablespoonchopped cilantro
  8. 1/2 cupsliced green onions
  9. dressing
  10. 2 tablespoonsolive oil
  11. 1 1/2 tablespoonsred wine vinegar
  12. 1/4 teaspoonfinely chopped jalapeño pepper
  13. Salt to taste

    Grill the corn, garlic, and peppers. Peel the roasted peppers and dice them.

    In a large bowl, whisk together the olive oil, vinegar, jalapeño, and salt.

    Add the remaining ingredients and mix well. Refrigerate until ready to serve.
