Black beans and corn salad with roasted peppers

Ingredients

30 minutes
4 servings
  1. 10 oz.cooked black beans
  2. 1roasted corn on griddle
  3. 1roasted, diced green bell pepper
  4. 1roasted, diced yellow or red bell pepper
  5. 8pear tomatoes, cut in half
  6. 2roasted and minced garlic cloves
  7. 1/2 tablespoonchopped cilantro
  8. 1/2 cupthin sliced scallions
  9. dressing
  10. 2 tablespoonsolive oil
  11. 1 1/2 tablespoonsred wine vinegar
  12. 1/8 teaspoonminced jalapeño pepper
  13. Salt to taste

Cooking Instructions

30 minutes
  1. 1

    Roast the peppers, corn, and garlic.

    In a large bowl, beat the oil, vinegar, minced jalapeño pepper, and salt together.

  3. 3

    Add and mix in the rest of the ingredients.
    Refrigerate it.
