Chamchamiya is usually made from pearl millet flour. Vegetables like green fenugreek, green garlic, coriander etc. are very good in winter season. I have used green fenugreek, green garlic and coriander in abundance in this chamchamiya. Pearl Millet chamchamiya has been made in our house since my grandmother's time. It is very fun to eat these chamchamiya with green chutney, pickle or tea when served hot.

Ingredients

  • 1 cuppearl millet flour
  • 1/2 cupFinely chopped green fenugreek leaves
  • 1/4 cupFinely chopped green garlic
  • 1/4 cupFinely chopped coriander
  • 1/2 TspCarom seeds
  • 1/2 TspAsafoetida
  • 1/4 TspTurmeric powder
  • 1 TspGinger-chili paste
  • 1 TbspWhite Sesame
  • 1/2 cupcurd
  • 1/4 Tspbaking soda
  • Salt to taste
  • as neededWater
  • Oil or ghee as needed for roasting

    Add chopped green fenugreek, coriander and green garlic to the pearl millet flour.

    Now add carom seeds, asafoetida, turmeric and ginger-chilli paste.

    Prepare a medium thick batter by adding salt, curd and baking soda, salt as per taste and adding water as required.

    Heat the pan, put some oil or ghee in it, Add white sesame seeds and pour the prepared batter on it. Once one side is cooked well, flip it over and cook the other side too.

    So pearl millet chamchamiya will be ready to serve.
