California Farm Chicken Liver Fried Rice

Here is another chicken liver student dinner made on a hot plate in a wok, a full week of dinners under 50 cents each.

Ingredients

Under un hour

  1. 1 poundfrozen chicken livers
  2. 6 cupswater
  3. 3 cupsdry long grain rice, like basmati
  4. 1 Tbsoil or margarine
  5. 1white onion
  6. 1green onion
  7. 1carrot
  8. 1tomato
  9. 1celery stalk
  10. 6 sliceszucchini, diced
  11. Clovegarlic, diced, or granulated dried garlic
  12. Tbssoy sauce
  13. Tbspepper sauce
  14. Optional: add fried egg, add fried banana
  15. Equipment: hot plate, wok, ziplock plastic gallon size bag
  16. Cost: livers $2, rice 30 cents, onion, carrot, zuchini, celery, other 50 cents, 46 cents per dinner

Cooking Instructions

Under un hour
  1. 1

    Bring frozen chicken livers to boil in 6 cups of water with a Tbs of pepper sauce in the wok, boil three minutes to kill any raw meat bacteria till livers are firm, lift livers out of broth, set aside.

    Addd 3 cups of long grain rice to the broth in the wok, stir and cover, bring to a hard boil, turn off. Let the rice absorb all the juices, rest an hour.
    When cooled, fluff rice with fork and put in ziplock gallon bag.

    Chop vegetables thin and dice small for stir fry. Put butter or oil in wok and stir fry garlic and onions first till you smell the onions and they are soft and glazed. Add other diced vegetables, add sweet soy sauce, drizzle over vegetables and stirfy till you smell the vegetables and they are soft.

    Add chicken livers and stir fry till you smell the chicken livers. Add rice and stir till you smell the rice baking. Done!

    Serve one portion, pack leftover portions when cool in ziplock bag. Reheat next dinner in medium hot dry work, stirfry, five minutes. If the dish tastes too spicy for you, you can bite into a piece of shrimp cracker, it takes the heat away. Shrimp cracker recipe included below. Enjoy.
