  1. Stirfried rice, 2 pounds:
  2. 2 cupsLong grain basmati rice, cooked
  3. 4 cupsWater
  4. 1 TspTurmeric
  5. 1 TbsSesame oil
  6. 1 TspSambal pepper sauce
  7. 2 Tbssoyu soy sauce
  8. 1 TbsGarlic granulated
  9. Stirfried pork, 2 pounds:
  10. 2Pork steaks, deboned, 2 pounds
  11. 2 cupsAnchiote Marinade
  12. Stirfried vegetables, 2 pounds:
  13. 2Carrots, grated
  14. 6Mexican Onions, chopped whites, chopped greens
  15. 1 cupGreen cabbage, chopped
  16. 1 cupGreen beans, frozen
  17. 1 cupdiced Red tomatoes
  18. 4Stirfried eggs, scrambled
  19. Equipment: large wok with lid, skillet, rice cooker pan with lid, food processor, chopping block, hatchet
  20. Cost: pork $3, eggs $1, vegetables $2, rice 60 cents, other 20 cents, 8 dinners, 85 cents each

    Mix spices in 4 cups cold water with 2 cups basmati rice in a cooking pan, bring to rolling boil, ten minutes, turn heat off, lid on, rest, cool, taste. Takes 50 minutes to make cooled fluffy delicious rice.

    Marinade pork chops overnight in cup of orange juice, slices of one lemon, 4 Tbs tequila, 2 Tsp anchiote paste, sear few minutes on each side in hot cast iron skillet, slice in thin strips, simmer in marinade till cooked, another ten minutes. Remove pork strips, cut in small dice. Ten minutes.

    Put diced white and green mexican onions in heated wok with spray of olive oil and stirfry till glazed, five minutes.

    Add diced pork and stirfry pork till fat has rendered. Five minutes.

    Turn heat down to low. Add cabbage, grated carrot, green beans, tomato, stir well, put lid on wok and simmer till beans are al dente and vegetables have released their juices. Ten minutes.

    Make center in wok for four eggs, scramble. Five minutes.

    Add cooked turmeric rice and stirfry till fragrant and crunchy. Taste. Rice should have absorbed all the other flavors of the pork, onion, spices, vegetable juices, eggs, and be perfect, hot or cold, for dinner. Ten minutes.

    Drizzle sweet and sour thick soy sauce over when serving. This fried pork rice reheats well in wok or microwave. Tastes well hot or cold for breakfast, lunch and dinner. Perfect when sick. Enjoy.

My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
