Nori Pork Floss and Egg Rice Roll

It's been a while since I made sushi or rice rolls. I bought a bamboo sushi rolling mat before, so today I cooked some rice, made an egg crepe, lined the bamboo mat with plastic wrap, placed a sheet of nori, spread the rice on top, added the cooked egg crepe, drizzled on some mayonnaise, sprinkled with pork floss and nori, then rolled it all up. That's how you make a delicious rice roll.

Rinse the white rice and place it in an inner pot with 1 1/2 small bowls of water (about 3/4 cup or 200 ml). Soak for 30 minutes. Add 1 small bowl of water to the outer pot and steam the rice in a rice cooker. Once the cooker switches off, let the rice sit for another 5 minutes.

Crack 2 eggs into a bowl, add a pinch of salt, and beat well. Heat oil in a pan, pour in the beaten eggs, spread evenly, and cook into a thin omelet. Remove and slice into strips for later use.

Place a bamboo sushi rolling mat on the table and cover it with plastic wrap. Lay a sheet of nori on top, then spread the cooked rice from step 1 evenly over the nori. Add the egg strips from step 2, drizzle with mayonnaise, and sprinkle with pork floss and extra nori if desired. Use the bamboo mat to roll everything up tightly. Your delicious rice roll is ready to serve.
