Bread custard pudding

This “cake” is made with fresh or leftover white bread, custard and nuts. There are not eggs in this dessert. It is a delicious baked warm dessert. The custard is also not cooked beforehand in this dessert.
This dessert goes back to 11th century Britain where it was a way to use the leftover bread or stale bread by cooks. Those days it was a common man's desserts or known as poor man's pudding. Slowly and gradually it stared gaining popularity as comfort food and now is featured in dessert menus in restaurants
This pudding is basically made by layering of bread pieces, nuts, custard infused milk, and baked till golden brown. You can make endless variations of this pudding with any kind of bread, dry cakes, rusks and other ingredients.

Preheat oven 350F.

In a bowl whisk together milk, sugar, butter, custard powder, cinnamon and vanilla till there are no lumps.

In a baking dish, layer half of the cubed bread.

Pour over half of the custard infused milk. Press to immerse the bread in milk.

Sprinkle chopped nuts, raisins, and cranberries.

Repeat the layering.

Bake for 30-40 minutes or till the top turns golden brown.

Remove, slice and serve hot, warm or cold.
