  • 1 kgflour
  • 2 packs/ 16gr instant yeast
  • 500 mllukewarm water
  • 100 mlsunflower oil
  • 1 tspsalt
  • 200 grmozzarella cheese shredded
  • 200 grgouda cheese shredded
  • Sausage / Sujuk
  • 50 mlPekmez / Grape Molasses
  • 50 mlwater
  • Sesame seeds

    Im a huge bowl, add 500 ml lukewarm water, and 2 packs of yeast. And mix them thoroughly.

    Onto that mixture add the 100 ml od sunflower oil

    Then, proceed with the 1kg of all-purpose flour and 1 tsp of salt

    Knead the dough for about 3 to 5 minutes, forming it into a ball.
    Cover it with a plastic bag and a towel and let it rise in a warm environment for about 30 minutes.
    What I usually do is pre heat the oven to 100°C and turn it off, and then I put the bowl with the dough to rise. It makes the process much easier and faster.

    After 30 minutes, the dough should be doubled in size, so you can feel free to Knead it some more. Add a little flour if it's too sticky.

    Then what you're going to do is form little balls it should be around 11 balls. Each one weighs about 150 grams per ball.
    Cover them with a plastic bag and a napkin and take each one at a time to continue with the process.

    Open them up and fill them with mozzarella, gouda, or grouded salami and close them by pinching both ends

    On a plate, mix 50 ml of pekmez and 50 ml of water, and pass through each filled out bread first with pekmez then cover them with sesame seeds like in the photos

    Lay them on a baking pan and in the middle cut them with a knife length wise and open them up in the middle. By doing that, you can add the slices of sujuk/sausage.

    After doing that, place them into the oven for 20 minutes.
    In the mid of the timer, so, after 10 minutes switch the baking pans.
    If the one that up the pida has started to turn to golden brown, switch the pans : The one that is up should go down and vice veraa.

    After 20 minutes, enjoy them with greek yoghurt. 😊
