White rice (without rice cooker)

It’s the bread and butter for most Asian cuisine. It Can be done with or without rice cooker. However, the most delicious rice are made without using rice cook in a clay pot, as you can alter the moisture and texture easily by adjusting the heat and cooking time.
The followings are the general recipe for cooking white rice. Adjust the time, heat and moisture based on the equipment that you are using.
Tip 1: there are three essential preparations to making fluffy and soft rice. They are 1. Rinse 2.Wash 3. Soak.
Tip 2: the rice to water ratio is 1: 1.2. However it depends on what type of rice you are using.

Steps

Rinse: Put the rice into a bowl. Pour filtered water and rinse the rice. Throw away the water after 10 seconds.

Wash: pour some filtered water into the rice. Use your hand and rub the rice with each other by making circular motion in the bowl. This removes any leftover barn remains on the surface.

Fill the bowl with water. The water will be cloudy at first. Throw away the water and repeat step 2 and 3 until the water less cloudy.
Note: the rice doesn’t have to be completely clear. The cloudier the water, the tougher the rice will be. Moreover, the bran also contain some good nutrients. - 4
Soak: after washing the rice. Pour filtered water into the bowl and let it sit and soak for 30 minutes (summer time) or 60 minutes (winter time). When soaking is done, the rice should turn white in colour.

Drain the water. Pour the rice into a clay pot. Pour 1.2 cups of water.

Close the lid. Bring it to boil.

When the water is boiling, turn the heat down to medium and let it cook for 5 minutes.

After 5 minutes, turn the heat down to low. Let it cook for another 5 minutes.

After another 5 minutes, turn off the heat and let it steam for 5 minute.

Before being served, gently stir the rice to allow air to get into the gaps. This helps the texture to become fluffier.
