Cooking Instructions

Cook the rice slightly undercooked.

Peel and shred the carrots. Fry it on medium high heat.

Cut the top open of 5 or 6 bell peppers (how many fits in your big pot standing with top up). Chop the tops of the bell peppers. It will go into stuffing.

Add chopped bell peppers to the carrots to fry. Meanwhile cut tomatoes. Add tomatoes to the pan.

Add meatless ground and spices. Add some tomato juice if it’s dry.

Add cooked rice. The stuffing is ready.

Stuff the bell peppers with the filling.
- 8
Fill the pot with Tomato juice to the peppers top level. Cover and Cook for 30 mins.

Makes 6 Stuffed Peppers - Approx 120 Calories per Pepper (Approx 25gms Carbs, 3gms Fat, 10gms Protein)Ingredients Below (add in or take out whatever you like! I change this slightly every time I make them depending what's in my fridge). Adding chili sauce to the filling and or baking sauce is a winner!
