Ingredients

Serves 2–3 servings
  1. 5.3 oz (150 g)pork loin, thinly sliced for shabu-shabu
  2. 3eggplants
  3. 3or more shiso leaves
  4. 2 tablespoonssoy sauce
  5. 1 1/2 tablespoonsvinegar
  6. 1 1/2 teaspoonssugar
  7. 1 1/2 teaspoonsfreshly squeezed ginger juice
  8. 1 1/2 teaspoonsextra virgin olive oil
  9. 1/2 teaspoonor more ichimi togarashi (Japanese chili powder)
  10. 1 tablespoonground sesame seeds

Cooking Instructions

    Cut off the stems from the eggplants. Wrap them in plastic wrap and microwave on 500W for 4–5 minutes. Immediately transfer to ice water, then cut each lengthwise into 4 pieces.

    Mix together all the sauce ingredients marked with *. Slice the shiso leaves into thin strips.

    Lay out the pork slices. Quickly blanch each slice in hot (not vigorously boiling) water, then drain on paper towels.

    Arrange the eggplant and pork on a plate. Drizzle with the sauce, then top with the sliced shiso leaves. Enjoy!
