Since it's snowing here, my students wanted to make something nice and comforting for their school mates today. This is what they decided upon. They made one beef roast and one pork roast and doubled the sides. Anyway, it was loved by all - including their teachers! They had so much fun with them, they plan on making chilly Yogurt & Fruit Parfaits with granola next!

Ingredients

12 servings
  1. ● For The Roast
  2. 2 PoundsBeef Or Pork Roast [shreadded]
  3. 2 (32 oz)Boxes Beef Or Chicken Broth
  4. 1 tbspMinced Garlic
  5. 1 tspFresh Ground Black Pepper
  6. ● For The Sides
  7. 2 JarsBeef Or Pork Gravy
  8. 2 CansSweet Corn [fully drained]
  9. 2 tbspButter [added to corn]
  10. 2 (24 oz)Packages Prefabed Mashed Potatoes
  11. as neededCherry Tomatoes
  12. ● For The Equipment
  13. as needed8 oz Mason Jars

Cooking Instructions

  1. 1

    Sear your dethawed roast on all sides. Add 2 boxes broth with seasonings and allow to simmer until it is tender. Usually two hours. Pull from broth and allow to cool slightly.

    Fork shread roast.

  3. 3

    Seal up and let sweat until needed.

  4. 4

    Heat your corn, gravy and potatoes.

  5. 5

    Construct your Sundays in your Mason jars as you desire. Top with a cherry tomato. To reheat - remove lids and microwave. Enjoy!
