Scratch made Chicken Noodle Soup

When the Hubster comes down with his 3rd cold this winter, you know it's time to bring out the big guns. Homemade chicken soup!

Ingredients

6 1 cup serving
  1. 2each chicken legs and thighs, skin on, bone in
  2. 1celery stalk, with leaves, cut in half
  3. 1carrot, unpeeled, cut in half
  4. 1/2large onion cut into wedges
  5. 1-2 springsparsley
  6. 4 1/2 cupswater, boxed chicken stock, or any combination
  7. For the soup:
  8. 6 cupschicken broth from stock pot
  9. 1 cuppeeled sliced carrot
  10. 1 cupsliced celery
  11. 1/4 cupdiced onion
  12. 8whole allspice berries
  13. Diced, cooked chicken
  14. 1 1/2 cupswide egg noodles
  15. to tasteSalt and pepper

Cooking Instructions

  1. 1

    To make the stock: in a stock pot, place chicken, celery, carrot, onion, parsley and broth, water, or a combination of the two, to equal 4 1/2 cups. Bring to a boil, uncovered, reduce heat to simmer and cover. Simmer for 45 to 50 minutes.

    Remove chicken from pot to cool. Strain and measure the broth, adding water to equal 6 cups. Wipe out stock pot.

    In the stock pot, add the stock sliced carrots and celery, onion, salt and allspice. Bring to a boil, uncovered. Cover and reduce to simmer. Simmer for 15 minutes

    Uncover add noodles and chicken. Bring to a boil, and boil until noodles are tender, 7 to 10 minutes. Adjust seasoning.
