Packed with vegetables, this ramen is filling and satisfying in both taste and appearance. This recipe became popular in February 2013—thank you to everyone who tried it! I created this recipe after winning a product monitor campaign. I wanted to make instant ramen healthier and easier to eat with plenty of vegetables. With garlic and chili bean paste, it has a flavor similar to Tenri stamina ramen. My husband loved eating this after his night shift—it's a hearty meal!

Ingredients

Serves 1 serving
  1. 1 packageSapporo Ichiban Miso Ramen
  2. As much as you like of your favorite toppings (such as vegetables, pork, etc.)
  3. For this recipe: cabbage, bean sprouts, pork, daikon greens, carrot
  4. 1 teaspoontoasted sesame oil (5 ml)
  5. 1 clovegarlic, grated
  6. 1 teaspoonchili bean paste (doubanjiang; adjust to taste)

Cooking Instructions

    Roughly chop the vegetables you’ll use as toppings.

    Add the sesame oil and grated garlic to a frying pan and heat. When fragrant, add the vegetables that take longer to cook first and stir-fry. Make a vegetable stir-fry.

    Bring 2 1/3 to 2 1/2 cups water (550–600 ml) to a boil. Cook the noodles for 2 1/2 minutes, then transfer just the noodles to a serving bowl.

    Pour the noodle cooking water into the pan with the stir-fried vegetables and heat. Immediately add the soup powder and chili bean paste. When it comes to a boil, pour everything over the noodles in the bowl.
