I don't remember where I got this recipe but it is super easy and tasty. It is also a quick fix when I do not have a lot of time to make a good meal. My picky daughter always asks for seconds.

I don't remember where I got this recipe but it is super easy and tasty. It is also a quick fix when I do not have a lot of time to make a good meal. My picky daughter always asks for seconds.

Ingredients

  1. 16 ozsliced mushrooms, chopped into pieces (as small as you like)
  2. 4 Tbsonions, chopped
  3. 2-4 clovesgarlic, minced
  4. 4-6 Tbsbutter
  5. 6 Tbsflour, divided
  6. 32 ozchicken broth
  7. 2 c (1 pint)cream (either light or heavy depending on preference)
  8. 1 tspsalt
  9. 1/2 tsppepper
  10. 1/2 tspnutmeg

Cooking Instructions

    Cut mushrooms into slices.

    In a separate bowl mix cream, and the with 2 Tbs flour and all seasonings. Blend thoroughly and set aside.

    In a 3 Qt pot, melt butter. Add onions, garlic, and mushrooms. Cook until onions are soft.

    Blend 4 Tbs flour in the mushroom mixture and blend.

  5. 5

    Add chicken broth and heat until slightly thickened, while stirring frequently.

    Stir cream mixture into the mushroom soup mixture. Heat to thicken, stirring frequently.

    When soup is creamy with no visible irregularities, it is ready to eat. Enjoy!
