Tender Teriyaki Chicken Breast with Melted Cheese

Trim any excess fat from the chicken breast and cut it into bite-sized pieces. Place in a bowl, add 1 tablespoon sake, and rub it in. Let it marinate for about 5 minutes.

Pat the chicken dry with a paper towel, then coat the pieces lightly with all-purpose flour. Heat a skillet with a little oil and place the chicken skin-side down (if any skin remains).

Once both sides are nicely browned, cover the skillet and steam-cook for 3 minutes. When done, remove the chicken from the pan and set aside.

Without washing the skillet, add the sauce ingredients (marked with ★) and simmer briefly to thicken. Return the chicken to the pan and coat with the sauce over low heat.

When the chicken is glossy and coated, place the cheese slices on top. Cover the skillet and let the cheese melt. Once melted to your liking, it's ready!

Transfer to a plate and, if desired, sprinkle with parsley to finish!
