Edamame Edamame Salad

I made this dish using dried edamame, similar to how you would make shiraae (tofu salad), but with less moisture, making it perfect for lunchboxes. Great for meal prep!
Recipe background: I found dried edamame at the supermarket and wanted to try something different from a salad. I wanted to enjoy edamame even when it's not summer, and I was getting tired of tofu shiraae, so I came up with this idea.

Soak the dried edamame in plenty of water until rehydrated. Once the beans have plumped up, boil them with salt for about 10 minutes.

Boil the carrot for 1 minute. Boil the hijiki for 1 minute as well. In a separate bowl, mix together all the ingredients marked with ○, making sure to dissolve the miso completely.

Process two-thirds of the edamame in a food processor until finely chopped. Transfer to a bowl and add the mixed ○ ingredients, stirring well.

Add the hijiki and carrot to the bowl from step 3. Just drain the hijiki in a strainer; you don't need to squeeze out all the moisture. Mix everything together.
