Place the green onion, garlic, and chicken skin in a frying pan. Cook without oil until lightly browned.

In a separate saucepan, combine the mirin, soy sauce, and sugar. Bring to a gentle simmer. (You can use this as a teriyaki sauce.)

Pour the sauce into the frying pan with the sautéed green onion, garlic, and chicken skin to infuse the flavors and aroma.

Leave the green onion, garlic, and chicken skin in the frying pan, and return the sauce to the saucepan. Simmer to thicken.

Lightly sauté the sauce-coated green onion, garlic, and chicken skin in the frying pan. Stir quickly to avoid burning.

Return the thickened sauce from the saucepan to the frying pan to further infuse the flavors and aroma from the green onion, garlic, and chicken skin.
