Stuffed Zucchini w/ homemade Sauce
This is one of my favorite dinners and it's sooo clean as I don't use canned tomato products!
Steps

Steam tomatoes until skins begin to crack. Approx 10 minutes. Once they cracked, dump them in a bowl of cold water and peel. Slice them in 1/2 and seed them. Place in food processor/blender and blend until desired consistency.

Brown ground chicken, garlic and onions on the stove top.

In the meantime, slice the Zucchini in 1/2 lengthwise and hollow out the middle to make a "boat".

Once chicken is cooked through, add all seasonings, salt and pepper to taste and the tomato mixture.

Simmer and reduce until desired consistency (approx 2 hrs). You could also place it in your crockpot!!

When sauce is complete, fill your Zucchini boats and place them in a baking dish.

Bake at 375° until al dente approx 20 mins. Then add a sprinkle of mozzarella to the top and broil.

Enjoy with a side salad and vinaigrette dressing!!
