Tofu sandwiches cheese for a healthy tofu cutlet.

Remove excess moisture from the tofu. Pat dry with paper towels, then microwave for about 2 minutes.

Cut the tofu into slices about 1/4 to 1/2 inch thick, as you prefer.

Season the tofu with salt and pepper.

Cut the sliced cheese to fit the size of the tofu pieces.

Sandwich the cheese between two slices of tofu. Dredge each sandwich in flour, then dip in beaten egg, and coat with panko breadcrumbs.

Pour enough oil into a skillet to cover the bottom and heat over medium heat. Add the tofu sandwiches.

When the bottom is golden brown, flip them over.

Once both sides are golden brown, they're ready to serve.

Enjoy with sauce or soy sauce if you like.
