Cute Tamago Sushi for Bento Boxes

I made these cute, bite-sized tamago (egg) sushi that kids love! Using salmon rice makes them even tastier. You can easily make this by repurposing leftover Japanese omelet (tamagoyaki).
Recipe background:
I created this using leftover salmon rice and thick Japanese omelet from a bento. My child prefers salmon rice over vinegared rice, so they were really happy with it. Even though it’s made from leftovers, just turning it into tamago sushi made breakfast extra special!

Ingredients

Makes 8 pieces
  • For the Tamagoyaki (Japanese Omelet):
  • 2large eggs
  • 2 tablespoonssugar (about 25 grams)
  • 1 tablespoonmilk (about 15 ml)
  • 1/2 teaspooncornstarch (about 1.5 grams)
  • Pinchsalt
  • 1little oil
  • For the Salmon Rice:
  • 1 bowlcooked rice (about 3/4 cup or 150 grams)
  • 1 tablespoonsalmon flakes (about 10 grams)
  • as neededNori (seaweed),

Steps

  1. 1

    Crack the eggs into a bowl and beat them. Add the sugar, salt, milk, and cornstarch, and mix well.

  2. 2

    Heat oil in a rectangular pan and pour in the egg mixture to make a thick omelet. Start on high heat, stirring as it cooks, then lower to medium-low when it’s half-cooked to finish evenly.

  3. 3

    Cut the omelet into your preferred thickness. Mix the salmon flakes with the rice and shape into bite-sized pieces. Cut the nori into thin strips.

    Place a slice of omelet on top of each rice ball and wrap with a strip of nori to finish.
