Ingredients

  • 2 1/2 cupsall-purpose flour (about 300 grams)
  • 1 1/4 cupsall-purpose flour: 1 1/4 cups bread flour or use one of the following combinations of all-purpose and bread flour
  • 1 2/3 cupsall-purpose flour: 3/4 cup bread flour
  • 2-3 teaspoonsbaking powder
  • 1/4 cupcold butter or room temperature soft butter (about 50 grams)
  • 1/2 cupmilk (about 100 ml)
  • 1/3 cupyogurt (about 40 grams)
  • 3/4 cupmilk if no yogurt is available (about 180 ml)
  • 1-2 tablespoonssugar
  • 1egg

Steps

    Combine the dry ingredients and add the butter. (If using cold butter, cut it into small pieces.)

    Rub the mixture with your hands until there are no lumps of butter and it becomes crumbly.

    When it reaches this consistency, it's ready.

    Add the milk, yogurt, and sugar, then crack in the egg.

    Mix with a fork until it comes together.

    Turn the mixture out onto a cutting board or silicone mat and knead by hand. When it no longer sticks to your hands, it's ready.

    Even if it still seems a bit floury, don't worry. Shape the dough to a height of about 3/4 inch.

    Cut out biscuits using a biscuit cutter or a glass. At this stage, you can also freeze them in a ziplock bag for later use.

    Bake at 395°F to 420°F (200°C to 220°C) for about 15 minutes, until the surface is golden brown.

    ◆◆ Some feedback mentioned the dough not coming together. Possible reasons include using melted butter or a watery type of yogurt.

    If you've already added all the ingredients and it's not coming together, adjust by adding more all-purpose or bread flour.

    Next time, try using only milk or only yogurt, or half of each.

    These are some solutions you can try.

    ▲▲ Another possible reason is room temperature. If it's cold and you've warmed the room, it might be harder for the dough to come together.

    ★ When making the dough (step 6), it's okay if it still seems a bit floury.

    If you knead it too much like cookie dough to prevent sticking, it might become too loose and not come together.
