Cut the chicken into bite-sized pieces. Place in a plastic bag, add the sake, sugar, and salt, massage to coat, and refrigerate for 15–20 minutes.

Thinly slice the onion.

Crack the eggs into a bowl and beat them.

In a separate bowl, mix together the soy sauce, sugar, mirin, and sake.

Coat the marinated chicken pieces with potato starch. Heat a skillet with a little sesame oil, place the chicken skin-side down, cover, and cook.

Once the skin is golden brown, flip the chicken. Move it to the center of the pan, add the sliced onions around it, and cook the other side.

When the chicken is cooked through, pour in the sauce mixture. Stir gently until the sauce thickens slightly.

Pour the beaten eggs evenly over the chicken and onions. Cover and cook until the egg whites are just set.

Serve over steamed rice and sprinkle with chopped green onions.
