When you come home tired, you can make this without using a frying pan, and cleanup is super easy!

Prepare two microwave-safe containers (microwave-safe lunch boxes are also fine).

To help the chicken cook evenly, poke both sides of the chicken thigh about 30 times with a fork. Cut the chicken roughly in half.

Add the ingredients marked with ★ (soy sauce, sake, sugar, garlic paste) to each container and mix well.

Place the chicken in each container skin-side down. Poke the chicken with a fork, then flip it so the skin side is up. This helps coat both sides with the sauce.

Microwave at 600W for 2 minutes 30 seconds. Let it sit for 2 minutes 30 seconds. Then flip the chicken so the skin side is down and microwave for another 2 minutes 30 seconds.

Repeat steps 4 and 5 for the second container. Now you have two servings of teriyaki chicken!

Scatter the salad mix over rice in a bowl, top with the chicken, and drizzle with mayonnaise to finish your rice bowl.
