Traditional Agar Jelly with Winter Melon Tea
Summer is the perfect time for icy treats! Whenever the weather gets hot, I like to make a big pot of winter melon tea, portion it into several bottles, and keep them in the fridge for a refreshing drink anytime. Today, I’m making a simple winter melon tea jelly. You don’t need any special ingredients—just use whatever jelly powder, gelatin, or agar powder you have at home to make this easy, homemade agar jelly.
Tip:
Gelatin powder is very similar to jelly powder. Just use whatever you have at home—most packages have instructions, and you can use my proportions as a guide.

Mix the jelly powder and cold water together until well combined.

Pour the winter melon tea into a saucepan, add the jelly mixture, and stir. Heat over low heat until it comes to a boil, stirring constantly, then immediately remove from heat.

Pour into a heatproof container and let cool. Once cooled, refrigerate until set.

To serve, place the agar jelly and shaved ice in a deep bowl, drizzle with brown sugar syrup, and enjoy your refreshing agar jelly!
