Pour about 1 1/2 cups water (350 ml) into a frying pan or pot and bring to a boil.

Once boiling, turn off the heat and add the beef stew roux, breaking it up so it dissolves completely.

Add the sugar, mirin, and 1/4 cup (50 ml) sake. Turn the heat to high and stir until it comes to a boil, then reduce to medium-low and simmer, stirring occasionally, until the sauce reaches your desired thickness.

Taste and add more sugar if you want it sweeter. If the sauce gets too thick, add more sake to adjust the consistency.

The flavor may vary depending on the brand of roux you use, so feel free to use your favorite brand.
