How this recipe came about: The chikuwa was about to expire, so I made this.
Steps

Cut each chikuwa into 4 pieces: first lengthwise, then crosswise.

Add all the ingredients marked with ☆ to a bowl and mix gently.

Coat the chikuwa pieces in the batter, then fry in oil at 340°F (170°C) for 10–20 seconds per side. (Fry for less time if the batter is thin, longer if it’s thick.)

Remove from the oil and drain off excess oil.
