Ingredients

  1. 5chikuwa fish cakes
  2. 1/3 cupall-purpose flour (40g)
  3. 1 tablespoonpotato starch (10g)
  4. 3 1/2 tablespoonsclub soda (50g)
  5. 1 1/2 teaspoonsmayonnaise (8g)
  6. 1 pinchdried seaweed (aosa or substitute with nori flakes)

Steps

  1. 1

    Cut each chikuwa into 4 pieces: first lengthwise, then crosswise.

    Add all the ingredients marked with ☆ to a bowl and mix gently.

  3. 3

    Coat the chikuwa pieces in the batter, then fry in oil at 340°F (170°C) for 10–20 seconds per side. (Fry for less time if the batter is thin, longer if it’s thick.)

    Remove from the oil and drain off excess oil.

  5. 5
