Deviled chicken spread

This Deviled Chicken Spread is perfect to serve with crackers, delightful sandwich, topping a green salad, enjoying on toasted rolls. The sandwich would go quite well with the usual sandwich suspects like lettuce, tomato, pickles, and slaw.

The mixture is called a "spread" instead of a "salad" because the chicken is chopped very finely, making it similar in texture to tuna salad. The spread is both creamy and flavourful.

I poached the chicken for this spread. You can use rotisserie chicken which you can conveniently find at any supermarket. Instead of sour cream you can use cream cheese (the brick version and not the spreadable one!), if you are not a fan of sour cream. Honestly, sour cream is closer to cream cheese and you will not feel the difference that much.
Adding the eggs is optional. I love boiled eggs and incorporated them into this spread. A combination of egg salad and deviled chicken!

I surrounded spread with bite size round crackers that I had lying around and had it for a light lunch. You serve it as canapés, appetizers as it is perfect for parties, potlucks and even dinner. This recipe is great for when you don’t have a lot of time or budget but want to bring something special.

Do not keep the prepared recipe for longer than three days. Store it in an air tight container in the fridge. Freezing the leftovers is not advisable. It will be watery when it thaws.

Ingredients

30 minutes
12 servings
  • 2chicken breasts, poached, cooled, shredded
  • 1/2 cupsour cream
  • 1/4 cupmayonnaise
  • 1 tbsp.honey mustard
  • 1 tsp.Worcestershire sauce
  • To taste, salt
  • To taste, black pepper powder
  • 1/4 cupchives, chopped
  • 3boiled eggs, chopped (optional)

Steps

30 minutes

    Add sour cream in a bowl and beat with a hand-held mixer.

  2. 2

    Add in the mayonnaise, mustard, Worcestershire sauce, salt and pepper powder. Beat to combine.

  3. 3

    Add in the shredded chicken and eggs. Use a spatula to fold the chicken and eggs into the sour cream mixture.

    Fold in the chives.

  5. 5

    Serve immediately, or cover and chill for 1 hour.
