Ingredients

4 servings
  1. 2 cupsRed Beans soaked in water overnight
  2. 2 TBcooking oil
  3. 1Ts Cumin seeds
  4. 6 ClovesGarlic
  5. 1Medium onion sliced
  6. 2Fresh tomatoes whole
  7. 1ts kosher salt
  8. 1 1/5ts Masala (Pauv Bhaji)
  9. 1 inchsmashed Ginger
  10. 2ts Toasted Cumin and Corriander Toasted and Crushed
  11. 1 cupchopped cilantro
  12. 4chopped green chillies
  13. 1 TBButter optional

Cooking Instructions

    Heat oil in Pot. Add cumin seeds. Cook 1 minute. Add Onion, Garlic, Tomatoes. Add 1 cup water. Cook 10 minutes.

    Add Masala. Add Ginger. Take out soaked beans, discard water, add beans to the pot. Add Salt. Add about 3 cups of water. Bring everything to Boil. Reduce heat to medium low. Cook for 90 minutes - until beans are fork tender. Add 1 cup water at a time, as needed - don't let it dry and don't add too much water.

    Add Cumin and Corriander powder, green chillies and cilantro. Top with 1 TB Butter. Let it rest. Serve when ready over rice.
