Ingredients

Serves 2 servings
  • 1 blocktofu
  • 5 ozground pork (about 150g)
  • 2 clovesgarlic
  • 1 tspwhole black pepper
  • 1 tbspwhole Sichuan peppercorns (or whole Japanese sansho pepper if unavailable)
  • 2dried red chilies
  • 2 tbspdoubanjiang (fermented chili bean paste) (see Recipe ID:23864068)
  • 1 tbspsweet bean sauce (tianmianjiang)
  • 2 tbspChinese soup base (bouillon)
  • 2 tbspchili oil (see Recipe ID:22669002)
  • 3 tbspcornstarch
  • 3/4 cupwater (180ml)
  • 1/2 stalkgreen onion (scallion)

Steps

  1. 1

    Mince the garlic and green onion. Cut the tofu into large cubes and set aside.

  2. 2

    Add the garlic, all ingredients marked with ★, and 3 tbsp oil (not listed in ingredients) to a skillet. Sauté over low heat.

    When fragrant, add all ingredients marked with * and the ground pork. Sauté over medium heat.

    Once the pork is cooked, add the water, Chinese soup base, and cubed tofu. Bring to a boil over high heat.

    When boiling, add the green onion and turn off the heat.

    Add the cornstarch dissolved in water and stir with a ladle. For the Gabi Mountain style, gently break up the tofu at this stage.

    Turn the heat back on and mix everything together. Finish by drizzling chili oil around the edge of the pan to release its aroma.

  8. 8

    If you like extra numbing spice, sprinkle with ground Sichuan pepper or ground sansho pepper before serving!

    I received a comment from someone from the real Gabi Mountain restaurant saying it looks just like the original.
