  • ingredients for the shrimp
  • 9 ozshrimp, peeled and deveined (250 g)
  • 1/2 tablespoonolive oil
  • 2 clovesgarlic, thinly sliced
  • 1 tablespoonchopped parsley
  • 1/2 teaspoonsea salt
  • salad
  • 2 cupsRomaine or curly leaf lettuce
  • 2 cupswatercress
  • 2 cupsspinach
  • 1/3 cupshredded carrot
  • 12grape tomatoes
  • 2hard-boiled eggs, each cut into 4 wedges
  • 12green olives
  • 2 tablespoonsgrated Parmesan cheese
  • lemon vinaigrette dressing
  • 1/2 cupolive oil (120 ml)
  • 1/4 cuplemon juice (60 ml)
  • 1 tablespoonapple cider vinegar
  • 1 teaspoonchopped fresh oregano
  • 1/2 teaspoonsea salt, or to taste
  • 1/8 teaspoonground black pepper

Steps

30 minutes
  1. 1

    Heat a skillet with the olive oil. Add the shrimp and garlic, and sauté for a few seconds, turning the shrimp to brown both sides. Add the salt and chopped parsley, and cook for a few more seconds. Do not overcook the shrimp or they will become tough. Transfer to a plate and let cool.

    Make the lemon vinaigrette by whisking all the dressing ingredients together in a bowl or shaking them in a bottle.

    Wash the lettuce, watercress, and spinach thoroughly. Use a salad spinner to dry them. In a large salad bowl, combine the lettuce, watercress, spinach, and half of the shredded carrot. Add dressing to taste and toss to combine.

    Divide the salad into 2 bowls. Arrange and garnish each bowl with the shrimp, grape tomatoes, egg wedges, olives, remaining shredded carrot, and Parmesan cheese. Serve immediately.
