Combine blueberries 🫐 strawberries 🍓peaches and raspberries in a bowl. Place fruit in a shallow ovenproof dish and sprinkle with brown sugar. Cook under a hot grill for 8 minutes or until sugar melts and caramelises.

To serve place a mound of mascarpone on each serving plate, make a well in the centre sprinkle with caster sugar and fill well with cognac. Surround with hot fruit and serve immediately.
