Creamy Chilli Oil Fettuccine with Pan-Fried Halloumi

Cook pasta as per packaging instructions. Drain, reserving 1/4 cup of pasta water, then set aside.

In a bowl, add halloumi cubes and paprika. Mix until each cube is well coated. Then, heat a skillet or pan on medium high and add oil. Once hot, fry halloumi until each cube is browned on all sides, about 3-5 minutes. Set aside.

Using the same skillet or pan, add 1 tbsp butter and oil and allow to melt. Then, add garlic and sauté for 2-3 minutes.

Add tomato paste and continue sautéing for another minute before adding chilli oil.

Stir well for another minute, then pour in the cream. Continue stirring for 1-2 minutes before adding the rest of the seasonings and basil.

Allow to continue cooking until it boils and stir occasionally. Then, add reserved pasta water, cooked pasta, halloumi cubes and the remaining butter. Stir until well coated before turning off the heat.

Serve immediately with more basil and parmesan, if desired.
