Preheat oven to 375 degrees, line a baking sheet with parchment paper.
In a bowl, grate peel and squeeze juice from one lemon. Cut the other lemon into slices.

Combine lemon peel (grated), lemon juice, butter, honey, garlic, rosemary, salt and pepper, into a small bowl. Mix.

In another larger bowl, combine lemon slices, chicken and potatoes. Pour butter mixture over the chicken and potatoes, toss and coat.

Then arrange single layer on baking sheet. Bake for 1 hour or until potatoes are tender, chicken is cooked through.
