Ada pradhaman is a traditional Keralite dessert made by using the rice ada with a sauce of cooked coconut milk and jaggery. Ada pradhaman is specially prepared in homes in the state of Kerala, on the festival day of Onam.

Take a bowl and add a cup of grated coconut, in it add a cup of hot water, cover it and leave it aside for 10 minutes. After 10 minutes, grind it into a smooth paste, along with the water. Then pour the coconut mixture over a strainer and extract the coconut milk from it. This is the milk from the first extract. Now repeat the same process and keep the second extract milk separately into an another bowl. Now keep the 2 bowls aside.

Now take a vessel and start boiling water. Once it starts boiling, wash the rice and put them in the boiling water. Let the rice gets cooked properly; now strain the rice and keep it aside.

Now take a pan & add 2 of ghee in it. Then fry the nuts and raisins & remove them on a plate. Now fry the chopped coconut pieces too. Keep this aside too.

In the same pan, add 1/4th cup water and grated jaggery in it. Let it dissolve completely then let it boil for 2 minutes.

Now add the cooked rice in it. Or you can even fry the rice in little ghee and then add it to the jaggery syrup. It would taste much better then. But I have skipped that step. Now let it cook for 8 to 10 minutes on a low flame until the jaggery syrup is absorbed by the rice or it had turned little sticky.

Now add the second coconut milk extract which is thinner in consistency (mentioned in step 1). Now let it cook for about 7 minutes on a low flame. Now add a pinch of salt, elaichi powder and 2 tsp of ghee. Mix everything well with the payasam.

Then add the first extract of coconut milk (the thicker one) and give it a mix. Let it cook for 5 minutes then add the fried nuts and fried coconut pieces in it. Let it cook for another 5 minutes. Now the payasam will turn little sticky in consistency. Turn off the flame.

Let it cool down completely. Then refrigerate it for about an hour or two. Your ada pradhaman is now ready to serve..
