Here is an interesting Gujarati snack , made easy --- Patra Dhokla Bytes .This is an easier version of the most famous Gujarati Patra .It is one snack that can be had anytime of the day , just with tea - coffee or as an accompaniment for a hearty meal or as an evening snack.

These patra Dhokla Bytes are so called because it uses lot of chopped colocassia leaves mixed with besan & spices . Than it is steamed like Dhokla first & than tempering is done . They are super - soft just like Gujarati Dhokla.

So friends , do try this dish when you want a quick snack which is sweet , sour & spicy. You can also store these Bytes for 2 days in refrigerator.

Ingredients

17 minutes
2 plates
  • 2 cupscolocasia leaves, finely chopped / 6 large colocossia leaves
  • 1 tspsalt
  • 1 tspcarom seeds (ajwain)
  • 1 tbspgreen chilli - ginger paste
  • 1 tspcoriander seeds & fennel seeds coarse powder
  • 1 tspblack pepper powder
  • 1/4 tspturmeric powder
  • 1/4 tspasafoetida
  • 1-2 tsptamrind pulp (imli) (boil tamrind in water & squeeze out thick pulp)
  • 2 tspjaggery, grated
  • 1 tspcoriander - cumin seeds powder
  • 1 tspred chilli powder
  • 2 tsphot oil (for softness)
  • 1-1 1/4 cupbesan
  • Water as required (lumpy mixture)
  • 1/2 tspoil to grease the thali / plate
  • 1 tspeno fruit salt + 1 tsp water to activate eno
  • For tempering : 👇
  • 2 tbspoil
  • 1 tspmustard seeds
  • 1 tspcumin seeds
  • 1/2 tspasafoetida
  • 1 tspsesame seeds
  • 1 tspchopped coriander
  • For Meethi Chutney : 👇
  • 2 tbspdried mango powder (amchur)
  • 1/2 tsproasted cumin seeds powder
  • 1 tspsanchal powder
  • 1/2 tspcoarsely crushed fennel seeds
  • 3 tbspjaggery
  • 1 tspsugar(for thickness)
  • 1/2 tspcoriander - cumin seeds powder
  • 1/2 tspred chilli powder
  • 2-3 pinchesasafoetida
  • 1 tspdesicated coconut
  • Salt to taste
  • 2 cupsWater (add slowly as per requirement) (The batter should be thick dropping paste)

Steps

    Wipe the Colocasia leaves with a wet cloth & chop them finely. Take them in a bowl.

    Add salt, carom seeds, green chilli - ginger paste, coarsely crushed coriander & fennel seeds powder, black pepper powder, asafoetida & red chilli powder.

    Heat oil & add in the mixture. Add besan & mix well, taking care that leaves are more than besan. Add water to make a semi thick batter.

    Heat the steamer. Grease a thali / plate with oil. Add eno & water on top of eno. Bubbles will form. Mix gently.Now pour the batter in the greased thali / plate & with the back of a spoon level the batter.

    Steam the dhokla for 5 -7 minutes. Check after 7 minutes. Cool a little & cut into pieces.

    Tempering : Heat oil, add mustard seeds, when they splutter,add cumin seeds.Add asafoetida & switch off the flame. Add sesame seeds. Add Dhokla Patra Bytes in this tempering & cook till nice & crispy. Remove the Patra dhokla in a serving plate.

    Instant Meethi Chutney : In a pan take dried mango powder, roasted cumin seeds powder, sanchal powder, coarsely crushed fennel seeds powder, jaggery, sugar, coriander - cumin seeds powder, red chilli powder & salt.

    Add water & mix well. Cook the mixture till the required thickness is obtained. ( The chutney will thicken on cooling, so set the consistency accordingly.

    Remove the portion of Chutney in a small bowl and serve with Patra Dhokla, an easy & quick version of a very popular Gujarati snack, Patra. Serve it as a quick byte along with Prasad to the Lord first & than to the guests.🙏🌸🙏🌸🙏🌸🙏🌸🙏
