Easy to make spicy aromatic rasam with horse gram (Kulth or Muthira in Hindi or Kollu in Tamil) tomato and quite a few Culinary herbs from our garden. Horse gram is rich in minerals Iron, Molybdenum, Phosphorous. Calcium, ( the highest calcium content out of all other pulses)Proteins. It has a very high content of vegetarian protein.. It contains slowly digestible carbohydrates which are good for weight loss and diabetes.
Rich in Flavonoids, Anti-oxidants, and Polyphenols, high fiber content,. Vitamin B. Rasam is good digestion and immunity

Make a checklist keep all ingredients within reach

Add 4 cups of water to horse gram in a bowl. Place the bowl in a pressure cooker, cook until soft. Take out after cooking.
While horse gram is cooking attend to rest of chores

Paste:
Heat 1tbsp oil in a sauce pan over medium heat; then add cumin seeds. Then fry the dal, urad dal, chana and toor dal one by one. When fragrant, add pepper, fenugreek and chilies. Fry about a minute. Add mint and curry leaves, sauté until the raw smell goes away. Turn off the stove, soak the fried ingredients in 1 cup of water and grind in a mixer along with ginger and garlic. chilies. The paste is ready. Use 2 tbsp of the paste to make rasam - 4
To make rasam,
Heat oil in a heavy pan over medium heat and add mustard seeds, let the seeds pop. Add cumin seeds, turmeric powder and curry leaves, sauté for a minute. Add tomatoes and sauté. Cook until soft. Add 6 cups of water and bring it to boil. Add the paste, stir and bring the rasam to boil for 5 minutes - 5
Adding tamarind is optional. Dissolve tamarind paste in 2 cups of water and add to the rasam. Add jaggery and let it boil

Add the cooked horse gram and bring the rasam to boil on a medium high flame Let it boil well for 4-5 minutes, salt to taste. let it boil for 2, switch off the stove.
Garnish with chopped cilantro. The whole house will be filled with the aroma of rasam. Rasam is ready to taste. You may drink the rasam as it is or mix with rice
