Ingredients

25 minute steam, 4 hour soup
2 people appetizer, 2 people soup
  1. 2large fresh artichokes, 1 1/2 pounds each
  2. 1 cupfresh made mayonaise
    California Farm Made Kewpie Mayonnaise
  3. For the soup:
  4. 4 cupsartichoke beef bone broth
  5. 3beef bones
  6. 3 Tspbeef broth bouillion powder, optional
  7. 2 cupsArtichoke Pulp
  8. 1 cupGarbanzo beans
  9. 2 cloveshardneck garlic
  10. 1Lemon
  11. 1 Tbsapple cider vinegar
  12. 1 Tbsfresh Mint
  13. 1 Tbssweet Paprika powder
  14. 1 TbsOlive oil
  15. 1 TspFlaked seasalt
  16. 1 Tspwhite Pepper
  17. Equipment: handheld foodmill, steamer in cast iron dutch oven with lid, soup pan
  18. Cost: $2 per artichoke, soup ingredients $2

Steps

25 minute steam, 4 hour soup
  1. 1

    Pour boiling water over the whole artichokes and steam 2 x 12 minutes. Add more boiling water after 12 minutes.

    Eat the steamed artichoke as follows. Dip bottom leaf in mayo. Scrape inside bottom flesh with spoon or side of fork. Lay leaf aside. Cut artichoke heart in four, use spoon to remove hairy top, dip heart in mayo. Save the leftover leaves and stems to make pulp.

    Boil the leftover leaves and stems with garbanzo beans 4 hours in 4 cups of water with 3 beef bones till the leaves and stem pulverize when pressed between thumb and finger. Beef bones go to the dog. Taste the broth. Add optional beef broth bouillion powder to taste.

    Grind boiled trim and stem in food mill with fine sieve. Measure the pulp, about one cup per artichoke. Left over fibers go to make compost tea.

    Cream the soup by mashing garbanzo beans with potato masher. Finish soup with beef bone broth and pulped trim and stem, garbanzo beans, garlic, olive oil, vinegar, lemon juice and paprika powder. Top with parmesan cheese. Enjoy.

Soup sounds fabulous! This type of artichoke is not often seen over here - mostly I think because no-one knows what to do with them! First time I had them was in France 45+ years ago. They were delicious, simply boiled and served in a bowl with a side of vinaigrette (what we know as French dressing) to dip the leaves into. So sorry to hear about the wildfires over there. I pray there are no more losses of lives and all is under control soon. Take care.
