I have alot of freinds from Europe and we all live so far away. Here Stollen in the shops is either very evpensive or awful or both. Try this and its AMAZING :P

Place the raisins, candied citrus peel and almonds in a medium bowl and pour the rum over it. Stir to combine. Set aside or even overnight

In a jug heat the milk in a microwave for 2-3 mins just before boils. you need to stir every min. Dont let it boil over. then alow to cool

Stir the yeast and 2 tablespoons of the sugar into warm milk and let sit in a warm place for 15 minutes until very foamy on top.

Place the flour, remaining sugar, egg, egg yolks, butter, vanilla extract, lemon zest, salt, cardamom, mace and cinnamon in the bowl of a stand mixer fitted with a dough hook. Add the yeast/milk mixture. Use a spoon to stir the mixture until it comes together. Knead the dough on medium 7-8 minutes.

Remove the dough ball, lightly spray the bowl with a little oil, return the dough ball, cover loosely with plastic wrap and place it in a warm place or lightly warmed oven to rise until nearly doubled in size, at least 1 hour maybe if cool room.

Knock back the dough and then add the fruit mixture. use Dough hook combine on slow speed so evenly mixed together. If a little wet add more flour so mixture comes away from the sides.

Turn out onto a floured surface and divide into equal pcs. Push each pc down into an oval shape around 3cm thick. then roll 1/2 the marzipan into a sausage shape about the same lenght. put into the middle and fold inwards the 2 sides to enclose. Place onto a lined baking sheet and repeat with 2nd loaf.

Cover with loose cling Flim and let rise for 40-60 mins until looks puffy. Pre Heat oven to 170 C, Pick off any stray raisens as these might burn in oven. Then Bake for around 30-40 mins until outside is golden (inside should be around 85c)

Remove from oven then allow to cool for 5 mins. Then using a toothpick poke holes all over the top then brush with the melted butter. Straight away sprink with the powdered icing sugar.

Slice and enjoy warm of wrap tightly with cling flim and let mature for upto 2 weeks. The alcohol will soak from the fruit into the bread :)

I also like to slice and toast with extra butter lol.
