This is a Hyderabadi Delicacy. One of my favourite. And my entire family loves this.I have tried to keep it simple and authentic . happy cooking..!!

This is a Hyderabadi Delicacy. One of my favourite. And my entire family loves this.I have tried to keep it simple and authentic . happy cooking..!!
Steps

Slit Brinjals and deep fry them. now keep it aside.

Heat oil in a pan. Add mustard seeds and cumin seeds and allow it to crackle. Now add onions, red chilli, garlic,tomatoes, peanuts and coconut.

Now allow it to cook. once the onions gets soft remove it from flame. Allow it to cool. And add this mixture to blender.

Blend this mixture into a smooth paste.(you can add little water in it)

Now put this paste in a pan and add turmeric, red chilli powder, coriander powder, salt, sugar and garam masala.

Cook the gravy for 5 mins. Now add tamarind paste and sugar. (sugar is optional)

Give it a nice mix. Time to add fried Brinjals.

Cook it for another 5 minutes. now it is ready to serve.

You can serve it with nice soft chapati's or biryani or also with simple steam rice.
