Black pepper chicken

Authentic Black Pepper Chicken is not battered and deep fried. In my version which is more like American-Chinese, the chicken is battered and fried! Make sure you cut the ingredients, prepare the sauce, and marinate the chicken before you start cooking. When the stir fry starts, you will need to move fast so the ingredients won’t overcook.

Steps

In a bowl add chicken, 1 ½ tablespoon corn flour, 1 teaspoon salt, I teaspoon sugar and egg white.

Mix well to coat chicken and set aside.

In a bowl add 3 tablespoon water and remaining corn flour. Mix well. Set aside the slurry.

Heat a wok with oil.

Add the garlic paste and fry 1 minute.

Add onion, dry red chillies, green chillies and bell pepper. Sauté 1-2 minutes.

Add 1 cup water and mix and boil.

Add pepper powder, salt, sugar, chicken powder, oyster sauce and soy sauce. Mix and bring to a boil.

Add slurry; mix and bring to boil. Set aside.

Heat oil in a pan or skillet.

Fry the chicken, in batches, till golden. Remove.

Add the chicken to the sauce, mix well.

Add green onion; mix well.

Serve with rice of choice.
