Ingredients

  1. 2Purple Sweet Potato
  2. 2Cucumer
  3. 1/2Yellow Capsicum
  4. 1Australian Carrot
  5. 1Beetroot
  6. Dressing
  7. 1 cuptoasted Peanuts (skinless)
  8. 1 tbsp.Tamarind pulp mashed in 1/2 cup water
  9. 2 tbspSugar
  10. 1Onion
  11. 2 clovesGarlic
  12. 1/2in. Ginger
  13. 3-4Dry red chilli
  14. 3 tbspOil
  15. 1 tspSoy sauce
  16. 1/2 tspSalt

Cooking Instructions

15-20 minutes

    Boil Sweet Potato and Beet root to your desired crunch.

    Cut the vegetables in the desired shape.

    To make dressing

    Grind the peanut to a coarse powder.

  5. 5

    Boil powdered peanut in tamarind water for 15 minutes.

  6. 6

    Grind onion,ginger garlic, and dry red chilli to a fine paste.

  7. 7

    Heat oil in a pan. Add onion paste and cook for 3-4 minutes.

    Add tamarind-peanut water and cook for 10 minutes, till sauce thickens.

  9. 9

    Add salt, sugar and soya sauce. Stir and take off from heat.

    Cool the dressing and serve with the salad veggies.
