Cooking Instructions

Crack the eggs into a bowl and beat them until smooth.

Add hot water (can heat in the microwave for about 1 minute) and mix well.

Strain the egg mixture through a fine sieve to ensure a silky texture. Pour the mixture into a heatproof bowl and cover it with a plate. Bring water to a boil in a steamer. Place the covered bowl in the steamer and steam over medium heat for 10 minutes Let the steamed egg rest for 2-3 minutes before uncovering.

Drizzle with soy sauce and chili oil or sesame oil. Garnish with chopped scallions and serve with rice. Enjoy!
