Steps

First, heat oil. Add cumin seeds and when they pop, add the other whole spices mentioned. Then add chill paste, ginger paste and mix in well. Then drop in the cubed potatoes and stir cook for 2 minutes.

Add 4 tablespoons hot water, turmeric powder, chilli powder and cook covered till done. Then add the tomatoes, salt, sugar and let it cook till tomatoes are soft for around 5 minutes.

Then add the shredded cabbage and stir well to mix in. Add cumin powder, coriander powder, red chilli powder, a pinch of garam masala and 2 tablespoons hot wt. Mix well and cook covered till cabbage is soft. Open lid in between and stir well to mix all the flavours.

When cabbage is completely cooked, heat some ghee in a small pan, add rest of the garam masala and pour this tadka on the cabbage.

Mix well, cover and switch off the heat. Let it sit on stove top for 2 minutes to let any leftover water to get absorbed.

Serve hot with steamed rice or paratha and enjoy!
